River Cottage Chai Kefir Panna Cotta

River Cottage chef Chiara Tomasoni shows us how to turn up the flavour on the already famously fragrant pudding in this surprisingly simple recipe.

How to make

  1. In a dry pan, toast the spices until fragrant. Then add in the cream, sweetener of choice and orange zest. Bring to a simmer. Meanwhile, add the gelatine to a bowl with cold water to soften it.
  2. Add the softened gelatine to the cream, stir to dissolve and remove from the heat. Strain the spices off, and let cool until it reaches room temperature.
  3. Once the cream mixture is cooled, whisk the kefir in and add the panna cotta mix to your chosen ramekins or teacups. Refrigerate to set for at least 2 hours, up to a couple of days. If setting in a ramekin, simply dip the ramekin in a bowl of hot water for 5 seconds, then flip onto a plate.
  4. Serve with caramelised orange slices or a fruit compote of your choice.
