Yorkshire Parkin Cake Recipe

This classic Yorkshire Parkin cake is deliciously sticky, warming and perfect for chilly nights.

How to make

  1. Preheat your oven to 140°C (fan) / 160°C / Gas mark 3. Grease and line a 20cm (8 inch) square baking tin.
  2. Start by combining the oatmeal, flour, ginger, cinnamon and baking powder into a large mixing bowl.
  3. Meanwhile, in a saucepan, gently heat the golden syrup, black treacle, butter and brown sugar over low heat, stirring occasionally until melted and combined. Remove from heat and allow to cool slightly.
  4. Once cooled, pour the melted mixture into the dry ingredients. Add a beaten egg and milk, then stir until well combined to create a thick batter.
  5. Pour the batter into the prepared tin and smooth the top. Bake in the oven for 1 hour or until a skewer inserted into the centre comes out clean.
  6. Allow the parkin to cool in the tin before cutting into squares. For the best flavour, store the cake in an airtight container for 2-3 days to allow it to mature. Enjoy!
