How to make

  1. Start by preheating the oven to 120 degrees.
  2. In a mixing bowl, whisk the egg white until it reaches stiff peaks, then gradually add in the granulated sugar, maintaining the same consistency until fully combined.
  3. Dollop the mixture into 6 equal amounts on a lined baking tray, then bake for approximately one hour until the meringues are completely hard, and slightly golden at the edges.
  4. In another mixing bowl, lightly whisk the cream with the icing sugar for a minute or two, until the mixture becomes light and airy. (For a lazy alternative, feel free to substitute this step for a deliciously creamy yoghurt instead)
  5. Roughly crumble the meringues into the mixture, and stir together.
  6. Finally, stir in the chopped fruit and berries, then divide into three small bowls and serve with an extra drizzle of cream.
