How to make

  1. Preheat the oven to 180°C/360°F (160°C fan/Gas 4).
  2. Prepare the apples by peeling, coring, and chopping them into small cubes.
  3. To make the batter, cream the butter and sugar together in a large bowl until light and fluffy. Beat in the eggs. Gradually fold in the flour, baking powder, vanilla, and milk. Add the chopped apples and stir until mixed well.
  4. To bake the pudding, add the mixture to a well-greased, oven-proof baking dish. Bake for 35 - 40 minutes until risen and golden.
  5. To make the toffee sauce, melt the butter, sugar, and cream in a saucepan over medium heat until smooth and glossy (which should take about 10 minutes). Set aside to cool slightly before serving.
  6. To serve, drizzle the warm toffee sauce over the pudding. Serve with custard, cream, or vanilla ice cream.
