How to make

  1. In a frying pan, heat some oil on a low heat and add the sliced onions.
  2. Add the brown sugar and a pinch of sea salt and keep mixing in the pan on a low heat.
  3. Once the onions have turned brown and jammy, take them off the heat and leave aside to cool.
  4. Cut the tops off the garlic bulbs, cover with oil and wrap in foil.
  5. Bake the garlic in foil for 30 minutes on 200°C or until the garlic is soft and well roasted.
  6. Once garlic has roasted and is cool, place it into a bowl with the butter, parsley and a pinch of sea salt.
  7. Mix well, ensuring the garlic is finely mashed into the butter.
  8. Cut your loaf diagonally so there’s a diamond pattern on the top of the loaf.
  9. Spread the butter well inside each crevice of the bread.
  10. Stuff the bread with the caramelised onions and both cheeses until each section has enough filling.
  11. Wrap the stuffed loaf in foil and bake on 180°C for 20 minutes or until golden and crispy.
